I love this time of the year. It's when I get to refocus my efforts especially those related to fitness and health. This year one of my goals is to eat breakfast more often. If you follow me on Instagram, I often mention how hard it is for me to eat breakfast in the mornings.

I'm usually tired and unprepared so I skip it, even though I know breakfast one of the most important meals of the day. I work out early in the mornings, so skipping breakfast isn't the wisest thing to do.

I've been out of protein for a few weeks and it's but a real damper on my morning routine. My husband and I can drink a fruit smoothie every day and not get tired. In fact, I even have my children loving the smoothie creations I come up with. I've learned that with right combination of yogurt and fruit, I could get them to like smoothies.

Now that they like them, I want to get even more smoothies on our menu starting with some fun smoothie bowls. I ordered a book with over 100 smoothie bowl recipes and let the kids pick out their favorites. Using their ideas, I came up with a Yogurt and Fruit Smoothie Bowl perfect for breakfast on the deck or patio.

Instead of using yogurt from a tub and fresh fruit, I went with frozen ingredients. Frozen ingredients make for the best smoothie bowls because it keeps them cold and creamy longer.

Dairy Free Fruity Parfait

I thought I had to give up milk and yogurt. I was about t-h-i-s c-l-o-s-e to never having a bowl of cereal, parfaits or yogurt based smoothie again. I've always been lactose intolerant, but in the last year, it's gone to a whole new level.

In the last year, I've been getting major cramps after ingesting milk or yogurt. I can eat cheese and ice-cream, but a bowl of cereal or smoothie with yogurt just seems to set my stomach off.

Just when I had given up, I decided to use Silk nut milk for my cereal. After trying them a few times, I love them and no more cramps.

Shortly after that, low and behold, I found out Silk also made yogurt.


I couldn't even believe it. Silk created a dairy-free yogurt in four different flavors that have no cholesterol, artificial colors or flavors. I grabbed all four and ran home to try them in a parfait.

Avocado and Banana Smoothie



I am an occasional vegetarian and love experimenting with new ways to enjoy fresh unprocessed food. Smoothies are one of the easiest ways for me to have a fresh fruits and vegetables early in the morning. Drinking a smoothie right before hitting the gym is the perfect light breakfast to give me the fuel I need for my workout.

My newest smoothie recipe includes fresh banana and ripe avocado.

Avocado is one of my favorite vegetables and I like prefer to eat it drizzled with extra virgin olive oil and salt, or along side a protein rich legume

I recently added it in a smoothie and loved the result.


Avocado & Banana Smoothie - serves 2

smoothie
  • 1 medium avocado
  • 2 frozen bananas
  • 1 cup of plain Greek Yogurt
  • 1/2 cup of 100% apple or orange juice

yogurt topping
  • 1/2 cups of plain Greek Yogurt
  • Cinnamon
  • 1 teaspoon of sugar

Fun Cereal Storage Idea

My kids are out of town for a few days, and I want to surprise them with a fun breakfast when they get back.

I went by Walmart to buy cereal and it led to, the purchase of new bowls, utensils, storage containers and serving ware.

I know I'm not the only one who goes to Walmart and does that. I went in to grab some cereal for the week and one thing led to another. I left the store with some new kitchen goodies and a fun idea to store the cereal.

To store each box of cereal, I used a Ball® 6 cup Wide Mouth Jar which holds about a full box of cereal. 


Transferring the cereal to the jars is simple, and it looks cuter on the the table than a bunch of cereal boxes. 
Since I knew I'd be using glass jars I chose cereals with fun shapes, colors and flavors. 
I used Trix minis, Cocoa Puffs, Honey Nut Cheerios and Reese's Puffs because they'd look pretty in the jars and they had toys in them.

Whole Wheat Pancakes

Do you know what I love about Saturday mornings? Whole wheat pancakes, maple syrup and turkey bacon with my husband and children.

I make about two batches, some plain and some filled with blueberries then we gather around the table, eat and talk. Saturdays are my favorite because we're all together. We've most likely slept in and everyone's super hungry by the time breakfast is ready.


I try to make the pancakes the way I know my family likes them. My daughter likes them without blueberries, flat and crisp while my husband loves blueberries and his pancakes fluffy and soft.


I love how easy this batter is to make and how fast each pancake cooks up.

Whole Wheat Pancake Recipe (feeds 5)
  • 2eggs
  • 1 cup of whole wheat flour
  • 1 cup of  all purpose flour
  • 1 1/2 cups of milk
  • 2 tbsp. sugar
  • 1/4 cup of vegetable oil
  • 4 tsps. baking powder
  • 1/2 tsp. of salt

I typically place all of my wet ingredients in a bowl and mix them together, then I begin adding my dry ingredients, saving the flour for last.

Once cooled, I place the darker pancakes on one side of my serving dish and the lighter fluffier ones on the other.

Although we love some pork bacon, we've been pretty good about only eating it sparingly. We tend to just have turkey bacon and some fruit with our pancakes. From time to time I'll even make a special fruit syrup when I'm in the mood. Blueberry and peach are my favorites, but I make whatever is in season.
